No, this isn’t some sort of slang or innuendo, it’s an actual thing that somehow I didn’t know it was a thing until recently. How did I not know this little trick that helps prevent sauteed zucchini from turning into a formless mush?
I came across this in Reddit of all places and it’s pretty simple. For sliced zucchini, just salt it liberally, wait 15-20 minutes for the salt to extract the water, blot it off. Flip the slices and repeat on the other side if desired. Et voilà, that’s it!
